As the client representative, our team spearheaded this ambitious conversion from a commercial space to a stunning F&B establishment.
Project Management Approach
Our role as project managers encompassed comprehensive oversight of the entire transformation process. Acting as an extension of the Blue Bottle team, Greyscale drove property sourcing, negotiated technical requirements, and navigated the challenges posed by the pandemic, including disrupted supply chains and logistics.
Key Project Management Achievements:
Efficient Timeline Management: Despite the complexities, we completed the project in just 7 months, ahead of schedule and under budget.
Intensive Communication: Over 100 hours of Zoom meetings were conducted to ensure seamless coordination between all stakeholders across different time zones.
Meticulous Task Management: We created and managed over 300 action items throughout the project lifecycle, ensuring no detail was overlooked.
Technical Adaptations: Oversaw the implementation of a custom HVAC system and façade modifications to meet licensing and restaurant requirements, adapting the former gallery space for its new purpose.
Multi-Level Coordination: Managed the development of three stories, including two food preparation areas and space for 50-60 covers, maximising the vertical space of the urban location.
Regulatory Compliance: Navigated local regulations and licensing requirements to ensure the smooth transition from art gallery to F&B establishment.
Supply Chain Management: Effectively managed logistics and procurement during global supply chain disruptions, keeping the project on track.
